I addedAs comented by @db48x, the correct anwer for this is add to my early-init.el file the setting from this question, and finally all works as expected.
Revert buffer with coding systemsetting:
(prefer-coding-system 'utf-8)
(set-terminal-coding-system 'utf-8)
(set-keyboard-coding-system 'utf-8)
(set-selection-coding-system 'utf-8)
(setq locale-coding-system 'utf-8)
(setq-default buffer-file-codinglanguage-systemenvironment 'utf-8)

This also allows you to remove all the other forced encodings to UTF-8 and should be the correct configuration. If you need to configure all
