Shell echoing every command

Try (setopt comint-process-echoes t) If non-nil, assume that the subprocess echoes any input. (I'm not sure whether it helps because I can't reproduce what you described. sorry)

If you want Emacs to behave like a terminal, you need to use one of the terminal emulation packages, such as: term, ansi-term, or vterm (and maybe eat, but I've never tried it).
